All Inclusive in Mexico

Is it better to go all inclusive or just bed and breakfast in Mexico. I am just looking to book a Cancun all inclusive hotel but was worried it may restrict me and my partner. We do not want to be tied to the hotel resort. We like to visit different places and Mexico is somewhere that offers lots of the different things to see. The convenience of all inclusive is obvious, not having to pay for meals and drinks whenever at the hotel is a bonus and will mean saving money when we are there. The problem is knowing if we will be there long enough to really get the benefit.
